Considering a food truck for employees/tenants
Having a food truck at your business is not only easy; it offers employees/tenants the convenience of having a food truck come to you and the food is fresh.
Many companies arrange for food truck serve their offices and, even though employees pay for their meal, it’s an excellent service to offer. Most peoples lunches range from 30 minutes to an hour. By the time an employee leaves their office and drives to a restaurant to pick up lunch, at least 30 minutes of their lunch has been used up.
There are a few things you need to take into consideration when making your plans to have a food truck.
Survey your tenants/employees: There are many ways to do this; one of my favorites is SurveyMonkey. Easy to use and it gathers the data for you.
You will need to decide what type of food your employees/tenants would like? The choices are many: Greek, burgers, pizza, sandwiches, tacos, soul food, Asian, Indian and the list goes on. Ask your employees/tenants what their favorite food truck is. This list will help get you started. I’d recommend considering food trucks that have a menu that will cater to dietary restrictions like Vegetarian, Vegan, Gluten Free options.
While surveying your employees/tenants, this will also be an excellent time to consider how many will participate and appreciate having a food truck, just because you have 500 people that does not necessarily mean that everyone chooses to have lunch from the food truck that day. Also, take in consideration if you have other businesses in your area. Typically about 10% of your total will decide to have lunch from the food truck that day. Most food trucks can feed about 100-150 people during a lunch shift and even more if you simplify the menu. I know giving people a variety is excellent; however, unless you have more than 100 people I would not recommend adding a second truck in one day. Most food trucks will require guaranteed minimums. This is where calculating the number of food trucks is essential. Minimums can vary from $400 to $1200, depending on the popularity of the food truck. Given an average ticket of $10, that means that you need to have at least 40-120 people participate. This minimum is set in place to prevent a food truck from setting up for lunch at a location and serving only ten people. It's a guarantee that their time is well spent at locations that want food trucks.
How often do you want to have a food truck serve your location? I would recommend once a week to get started and based on the outcome you can always add more days. Based on that what day of the week do you think will be best for everyone. Mondays typically not good days to have food trucks to come out. Also, do you have days that employees have the option to go home early or have the opportunity to work from home? Those are days that you probably also you want to avoid.
Once you have a rough estimate of how many people, which day or days you want to have food trucks and some food truck recommendations you can start calling around. I would create a list of questions to ask consistently with each food truck. Example of questions is listed below.
Are they licensed and insured? Have them send you a COI and listing your company as an insurer. A COI should be updated as their policy renews, at least once a year.
What is their average wait time when serving 100 people? You do not want your employees/tenants waiting 25 minutes for their food. If this is the case with a food truck you might want to partner them with another food truck that also might take longer to serve. Most tenured food trucks have mastered this and will average about 5-7 minutes.
Do they offer menu options that cater to dietary restrictions? Can they send you their menu?
Can they send you their availability? This is where it can get tricky; most trucks schedules are booked at least a year out depending on the popularity of the food truck. If their schedule is booked, ask them if they have started next years schedule yet.
Ask them if they would recommend other food trucks? Most food trucks all know each other and mostly like and respect each other. You want to have food trucks that you can depend on and will serve quality food.
Now that you have a list of food trucks that meet your needs and are available to serve. The next step is to create a calendar and schedule your trucks. This step is significant that you communicate the correct dates and you confirm with each truck. You would
